
Scrambled Eggs With Cheese
Eggs are a cheap source of protein and with this great tasting scrambled egg recipe its a great recipe for a breakfast and its cheap to make as well.

Ingredients:
- 5 large egg whites
- 2 whole eggs
- 4 large tablespoons of cottage cheese
- 150g of cucumber (diced)
- 30g shredded low fat mozzorella cheese
- 15g of black olives (optional)
- 30g of chopped mushrooms
- 1/2 white onion, chopped fine
- 1/2 a teaspoon of black pepper
Directions:
First whisk the whole eggs and egg whites in a large mixing bowl. Place the the onion and mushrooms into a small frying pan and cook until soft. When soft add the onions and mushrooms to the egg mix. Clean out the pan you just used.
Next add all the other ingredients except for the shredded cheese. Mix all the ingredients then add to a medium heated frying pan with a tablespoon of olive oil. Stir the mixture gently to scramble the eggs. Cook the mixture until the eggs are cooked to your desired .
Serve on a plate. Sprinkle shredded cheese over the top. If you want to add extra carbs simply serve of two pieces of brown or whole grain toast.
